Interceptor Maintenance

Maintenance Requirements

GGI’s and HGIs should be cleaned before the floating FOG and settled solids accumulation exceeds 25% of the HGI’s overall capacity. In order to prevent this, weekly or even daily cleaning of the HGI by kitchen staff or pumping contractors may be required to ensure proper operation. More information, including instructions on how to properly clean your grease interceptor, and a tutorial video can be found here. A current list of permitted Grease Haulers in the local area can be found here.

All food service establishments (FSEs) suspected of causing problems to the collection system or treatment facilities may be subject to random inspections. The JCSA uses the following criteria to inspect grease traps:
Percent of Trap Filled
Trap Condition
25 Good
25 - 50
Fair
More Than 50
Unacceptable
